Food is medicine!

Researchers from the College of Agriculture and Life Sciences reveal sweet potato as a weapon against diabetes.  The good news for diabetics is that research has confirmed that sweet potatoes are a low-glycemic index (GI) food. The glycemic index measures how quickly certain foods release carbohydrates into the body. Sweet potatoes contain a good deal of fiber, particularly when the skins are left on. The amount of fiber in a food slows down the rate of digestion of the starches.
